yum! pandan muffins

One of my top 10 favorite things about living in Asia has to be pandan. i love the green stuff and so do the kiddies. i have been buying pandan cakes and pandan muffins, pandan toasts and other goodies, but then i decided that i better make the small green cakes myself. has to be better, knowing what's in there, plus bibs absolutely loves baking - well as long as her hands are kept clean!

we have made them a couple of times, but i wasn't completely satisfied, i think i have nailed it this time, so i'll share the recipe!

pandan muffin recipe

3/4 cup flour
3/4 cup almond flour
1/2 cup sugar
2tsp baking powder
1/2tsp baking soda
pinch of salt
1 egg
1/2 cup coconut milk
1/2 cup oil
1/4 cup water
1 1/2 tsp pandan extract (or 6 fresh leaves soaked in the water and then strained)

mix the flours, sugar, baking powder, baking soda and the salt. in another ball mix the egg, coconut milk, pandan extract, water and oil. add half the wet to the dry and mix, then add the rest till you get a nice and smooth matter - do not mix too much or your muffins end up being very heavy. cook 20-25 mins @ 180c.
